  • 1 lb Lyoner sausage sliced into rounds or half-moons

  • 2 tbsp neutral oil butter, or clarified butter
  • 1 medium onion chopped
  • 1 leek cleaned and sliced
  • 2 carrots peeled and sliced
  • 1 clove garlic minced, optional
  • 1 1/2 cups chicken broth beef broth, or vegetable broth
  • 1 tbsp German mustard medium or sharp
  • 1/2 tsp dried marjoram
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp chopped parsley
  • 2 tbsp chopped chives

Optional Add-Ins

  • 1/2 cup peas
  • 1/2 cup diced celery root
  • 1/2 cup sauerkraut drained
  • 1/4 cup cream or sour cream
  • 1 tsp paprika
  • Pickle brine or vinegar to taste

Instructions 

  • Prepare the sausage and vegetables.Slice the Lyoner into rounds or half-moons. Dice the potatoes, chop the onion, slice the leek, and cut the carrots into thin rounds.

  • Brown the Lyoner.Heat the oil, butter, or clarified butter in a large skillet or shallow Dutch oven over medium-high heat. Add the Lyoner slices and cook until lightly browned on both sides. Remove the sausage from the pan and set aside.

  • Cook the aromatics.Add the onion, leek, and carrots to the same pan. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften. Add the garlic, if using, and cook for another minute.

  • Add the potatoes.Stir in the diced potatoes. Season with salt, pepper, marjoram, nutmeg, and paprika if using. Cook for 2 to 3 minutes so the potatoes begin to absorb the flavor from the pan.
