Steak ’n Shake has made a company-wide switch from vegetable oil to beef tallow for all foods cooked in their fryers, aiming to prepare restaurant food without seed oils. The owner had wanted to make this change for some time and now has a beef tallow supplier.
However, a disclaimer notes that their frozen fries are pre-prepared with soybean and canola oil before arriving at the restaurant. While only tallow is used for cooking in-house, the fries are not 100% seed oil-free, though the amount is minimal and dissipated. There is speculation they might find a new supplier for fries. The company claims the beef tallow fries are crispier, golden brown, and absolutely delicious.
