French-style tabbouleh, or „taboulé,“ is a beloved summer salad in France, distinct from its Lebanese origin. Unlike the parsley-heavy, bulgur-based Lebanese version, the French rendition uses fine couscous as its base. Key ingredients include tomatoes, cucumber, mint, parsley, lemon juice, olive oil, and often raisins or bell peppers.

Its appeal lies in its no-cook preparation: dry couscous absorbs the juices from the diced vegetables, lemon, and olive oil, requiring at least two hours (or overnight) to rest, resulting in a fragrant, non-soggy dish. It’s a versatile, refreshing side for barbecues, picnics, or a light main meal.

If there’s one salad I’ve made every single summer for years, it’s taboulé. But here’s the thing in France, when we say “tabbouleh,” we don’t mean the green Lebanese salad made from parsley. We mean something completely different: a couscous salad with tomatoes, cucumber, mint, parsley and even raisins.

It’s for us, typically the salad, we serve it as barbecue side, as a starter and we make it to take away for a picnic in Summer. And why we love it so much is you need to cook anything, not even the couscous! It’s just about assembling, exactly what you want on a hot day. Below, I’ll explain your how to make French tabbouleh recipe so it comes out fragrant, never soggy, plus how to adapt it to whatever you’ve got on hand.

  • Pour the dry couscous into a large mixing bowl. Add the olive oil and lemon juice. Stir to combine and let it sit for 10 minutes while you prep the vegetables.

  • Dice the tomatoes, cucumber, and bell pepper into small cubes. Add them to the couscous along with their juices and the raisins. Mix well.

  • Finely chop the parsley and mint. Add them and stir to combine.

  • Cover and refrigerate for at least 2 hours (overnight is ideal). The couscous soaks up the vegetable juices. Taste before serving. Add a drizzle of olive oil and a squeeze of lemon juice, plus a pinch of salt if needed.

This taboulé keeps for 2 to 3 days in the fridge in an airtight container. If yours tastes too tart, add a drizzle of honey or agave syrup!

What’s the Difference Between French-Style and Lebanese Tabbouleh?

The one I call “French-style” is the couscous salad most French families, me included, grew up on: fine couscous, tomatoes, cucumber, sometimes raisins, parsley, and mint. It’s yellow-orange, loaded with vegetables, with a generous amount of couscous.

Lebanese taboulé (or tabbouleh) is the original recipe, and it has nothing to do with that! It’s actually a salad made with chopped fresh flat-leaf parsley, a little bulgur (not semolina), and tomatoes, sometimes cucumber, but no raisins and no bell peppers. It’s green, very herbaceous, and the texture is completely different.

Did you know? This French version of tabbouleh emerged in the 1960s and 1970s, with the arrival of North African influences in French cuisine. Since then, it has become a staple in nearly every French household; everyone has their own recipe, though it’s often a far cry from its Lebanese origins!

Do You Need to Pre-Cook the Couscous?

No, you don’t need to cook the couscous or soak it in hot water, that’s the beauty of this recipe! The couscous will plump up on its own from the juices of the tomatoes and cucumbers, as well as the lemon juice and olive oil. Then, you just have to let it rest in the fridge for at least 2 hours or overnight. The longer it sits, the more flavorful it will become!

And, using raw couscous is exactly what sets a French taboulé apart from a simple couscous salad. Instead of soaking up water, the couscous soaks all the flavors of the vegetables. You will see, it makes it turn out really fragrant and it stays light and fluffy instead of going mushy.

Which Semolina Should You Use for Taboulé?

For this French tabbouleh recipe you need extra-fine couscous. You’ll also see it labeled “fine couscous” or “semolina No. 1.” If all you have at home is medium-grain couscous, that’s fine too. The grains will just be a bit bigger, with more chew.

If you’re in the US, look for it in the international or Mediterranean aisle, often sold simply as “couscous.”

Raisins, Bell Pepper, Herbs… What Goes Into a French Tabbouleh?

Well, to start with, there are the basic ingredients, the ones I always put in my homemade tabbouleh:

  • Couscous, fine wheat semolina
  • Tomatoes
  • Cucumber
  • Bell pepper
  • Lemon juice, about the juice of 2 lemons
  • Olive oil
  • Flat-leaf parsley
  • Fresh mint
  • Salt and pepper

And then there are the ingredients I add to give this tabbouleh even more flavor:

  • Raisins or dried apricots
  • Sun-dried tomatoes
  • Pomegranate seeds
  • Red onion
  • Feta cheese
  • Lemon zest
  • Spices: a pinch of ground cumin or a pinch of ras el hanout works too.

My tip: Be sure to dice your vegetables very finely, this will, first, release enough liquid for the couscous to soak, and second, give it a nicer texture. And above all, don’t hesitate to add plenty of herbs (mint and parsley), that’s what gives it its flavor!

How to Serve We Serve Taboulé in France?

In France, we serve taboulé at any occasions in Summer! Here are some of my favorites ways to server it:

  • As a light main course, served with cheese, bread or cold soup on the side
  • As a barbecue side, it stays fresh for several hours and is refreshing
  • As a starer to start off a summer meal
  • As an appetizer in small individual glasses, with homemade hummus and some raw vegetables
  • Perfect for a picnic with my savory tuna cake or my zucchini and goat cheese cake

For other salads that are easy to take along, my pasta salad with sun-dried tomatoes, artichokes, and pesto, and my Middle Eastern-style shredded carrot salad are just as convenient for a picnic.

Variation Ideas For Taboulé

Here are a few ideas on how I like to vary this taboulé recipe recipe:

  • Make it a meal: add cold peeled shrimp or diced cooled cooked chicken, and it becomes a full lunch.
  • Gluten-free: Replace the semolina with cooked and cooled quinoa. However, in that case, you’ll need to cook the quinoa well in advance. Check out my mint and lime quinoa salad which is quite similar.
  • Quick version: Don’t have time to wait 2 hours? Replace the lemon juice and some of the olive oil with homemade or store-bought gazpacho (about the same weight of gazpacho as dry semolina). Let it steep for just 30 minutes, then add the vegetables. You can try it with my watermelon gazpacho!

FAQ

What exactly is French-style tabbouleh, as opposed to the Lebanese kind?

The difference between this tabbouleh, which I call “French-style” to distinguish it from the Lebanese version (tabbouleh), is, first of all, that it’s made with durum wheat semolina (fine couscous) rather than bulgur, as in the Lebanese version. Second, it contains more semolina relative to the vegetables and less parsley: in the Lebanese version, parsley is the main ingredient and bulgur is used only in small quantities. Furthermore, Lebanese tabbouleh definitely does not contain raisins or other ingredients of that sort.

Can you make tabbouleh the day before?

Yes, that’s exactly what I recommend. Since the semolina isn’t cooked, it needs time to soak up the vegetable juices. So it’s best to prepare it the day before and let it sit in the fridge overnight.

Does the French taboulé contain gluten?

Yes, this French tabbouleh recipe contains gluten, since it is made with durum wheat semolina, which contains gluten. For a gluten-free version, replace the semolina with quinoa, rice, or even gluten-free semolina, which is becoming increasingly common in stores (often made from corn).

How can I keep my taboulé from getting dry?

If your taboulé is too dry, the easiest thing to do is add a little lemon juice or olive oil and let it sit for 15 minutes. Otherwise, sometimes I add a little cold water or orange juice to add flavor without making it too tart.

Can you use couscous to make this French taboulé?

Yes, that’s exactly right: fine couscous semolina is the main ingredient in this French tabbouleh recipe. “Couscous semolina” and “fine durum wheat semolina” refer to the same product in stores. Choose extra-fine semolina (No. 1 or “fine couscous”) for a more melt-in-your-mouth texture.
